Carrot Un-Tuna
A simple recipe using the pulp left after juicing carrots.

carrot pulp

cup
vegan mayonnaise
1/4
yellow onion
finely diced
1/4
pepper
diced

tbsp
celery seed
season to taste
1/4
tsp
sea salt
season to taste

dash
cayenne pepper
season to taste
Instructions
Mix all prepared ingredients together in a medium-sized bowl. Place on your chose of bread. You can substitute a flour wrap or lettuce, kale, or collard leaf wrap in place of bread. Top with lettuce and tomato, or your choice of raw veggies.
