Vegan Burger Recipe
I'd like to think of myself as a veggie burger connoisseur. I've had them all: synthetic as well as recognizable-in-nature ingredient-based burgers; homemade and restaurant bought; simple and epicurean. What I found over the years is that I most enjoy a whole food veggie burger that is packed with flavor and has a good use of spices. This simple and quick recipe makes maximum use of such ingredients.

Servings 4 burgers
Ingredients
- 1 potato grated, with skin
- 3 carrots grated
- 1 bell pepper finely diced
- 1 yellow onion finely diced
- 1/2 cup mushrooms chopped
- 2 cloves garlic minced
- 1/3 cup quick-cooking oats
- 1/3 cup cornmeal
- 1/2 cup extra virgin olive oil
- 1 tsp cumin to taste
- 1 tsp sea salt to taste
- dash cayenne to taste
Instructions
- Mix well. Shape into patties, and place into a lightly oiled pan on medium heat. Cook on each side until golden brown.* As an option, you could put these on a hinge type indoor grill. Also, be creative. Substitute different vegetables and spices. It's pretty difficult to mess up veggie burgers!
